ERGONOMIC ANALYSIS FOR THE REQUALIFICATION OF ACARAJÉ VENDORS KIOSKS IN SALVADOR

Abstract

The work performed by baianas de acarajé represents a traditional activity of significant cultural, social, and economic relevance in Salvador, Brazil. Recognized as an intangible cultural heritage by the Instituto do Patrimônio Histórico e Artístico Nacional (IPHAN), this occupation integrates Afro-Brazilian culinary knowledge, religious practices, and informal urban labor. Despite its historical and symbolic importance, the working conditions of these workers often present limitations related to inadequate infrastructure, spatial organization of workstations, and high physical demands. This study presents an ergonomic analysis of the work activity of 44 acarajé vendors based on a Preliminary Ergonomic Analysis (PEA). Data collection included semi-structured interviews, systematic observation, an ergonomic checklist based on Brazilian Ergonomic Regulation NR-17, and photographic records of workstations. The results revealed biomechanical overload associated with prolonged standing postures, manual handling of loads, and repetitive movements, in addition to exposure to palm oil smoke and extended working hours. Based on these findings, a kiosk design model grounded in ergonomic design principles was developed to improve working conditions and support the requalification of structures used by acarajé vendors in Salvador.
