Analysis of residues as support mechanism to reduction of environmental impacts: a study of case in slaughterhouse

This work describe the case study in a small bovine slaughterhouse, located in the northwest area of the Rio Grande do Sul state (Brazil), bringing a big important area in the current days, the subject on the management environmental. It has a evaluation of the productive process for the analyzed company, yours residues generated in each one of these stages of the process stages and an analysis of the aspects and environmental impacts. To achieve the objectives it took in consideration the materials and methods adopted through a revision of the literature on about this subject, by an exploratory research using a case study, in a qualitative approach, with visit in loco. In the analysis of the results, of this company, it could be verified that it needs of improvements in several stages of the productive process. Before that and desiring an optimization of the generated residues, it was looked for develop a Program of Environmental Management directed to the small and medium refrigerating companies with evaluation criterions of each residue generated in the productive process. Certainly this work will serve as model for other projects that can bring improvements the productive practices, and involved professionals can be aware with this subject of the environmental management in his companies.
