Food and nutritional edication actions for popular restaurants in Rio Grande do Sul

Popular restaurants are public facilities for promoting food and nutritional security, designed to offer adequate and healthy meals at affordable prices, prioritizing low-income populations. The objective is to report the experiences obtained with food and nutritional education activities of the Extension Project “More Flavor in the Kitchen of Popular Restaurants (RP) of Rio Grande do Sul (RS)” aimed at food handlers and managers of RPs in RS. During 2023, 7 theoretical demonstration activities were developed and made available online to managers and food handlers of RPs. To develop the theoretical activities, teachers were invited to each selected topic according to themes previously listed in the RPs. To carry out the demonstration activities, students from nutrition and gastronomy courses were selected, who prepared and recorded videos to demonstrate the theme listed in the lecture. In total, 4 demonstration videos of activities were produced, which covered hand washing, culinary skills, types of herbs and preparation of liquid soap. The project provided practical learning to the students involved in the activities and received positive feedback from the project participants, even though it did not reach all food handlers. The main result obtained was the students' proximity to community life, even if online in synchronous and asynchronous moments, in addition to the development of skills in different areas of activity of the future profession to create a practical action that could be explanatory for the audience that was watching without being tiring. Therefore, it is recommended to develop extension projects that insert the student in new realities and social contexts.
